A delicate fleur de sel harvested by hand on the Ile de Ré between Couarde sur Mer and Ars en Ré, in the heart of the Relais salt marshes. We added black garlic from Gironde, cooked for 3 weeks at low temperature, with a mild and digestible flavor and umami scent.
